1.所用原料以啤酒酵母、葡萄酒酵母和面包酵母为主,分自溶法、加酶法和酸水解法等。一般以自溶法为主,即利用酵母本身所存在的葡聚糖酶(Glueanase)和蛋白酶自溶后质壁分离(plasmolysis)而得。其工艺为面包活性干酵母加水成酵母悬浮液,在浓度5%、酶解温度50℃、Ph6.5以下酶解60h,然后加热灭酶后分离以除去菌体,再用水提取后减压浓缩杀菌而成。亦可进一步作热风干燥或喷雾干燥。
